Join us in the Culinary Garden for an extraordinary evening with Chef Carlos Gaytán, the first Mexican-born chef to earn a Michelin star. Born in Huitzuco, Guerrero, Chef Gaytán built his career in Chicago, where he gained acclaim for his ability to seamlessly blend traditional Mexican flavors with classical French technique. Today, he leads a growing portfolio of acclaimed restaurants across the United States and Mexico, each reflecting his distinctive approach—rooted in heritage, elevated through precision, and driven by a passion for storytelling through food.

For this special dinner, Chef Gaytán will present a menu that captures the essence of his cuisine: bold, expressive Mexican flavors refined with modern elegance and technique. Drawing inspiration from both land and sea, each course will showcase thoughtful compositions, layered sauces, and vibrant seasonal ingredients. Set within the lush surroundings of our Culinary Garden, the evening offers a uniquely Southern California experience—where exceptional cuisine, fine wine, and a beautiful sense of place come together under the open sky.

Each course will be thoughtfully paired with wines from Monte Xanic, one of Mexico’s most celebrated wineries in the Valle de Guadalupe. Known for their balance, structure, and sense of place, these wines will complement Chef Gaytán’s cuisine beautifully—creating a seamless dialogue between glass and plate throughout the evening.
